La Romanella è una varietà autoctona delle nostre zone, il cui patrimonio genetico unico è stato studiato dal CNR di Perugia. Le sue caratteristiche hanno reso questa varietà un Presidio SlowFood. Potrai assaggiare il gusto unico di quest’olio dal sapore antichissimo solo presso le nostre Tenute! Sull’etichetta è raffigurato un dipinto realizzato per noi dall’artista Serena Lobosco che ritrae la dea Atena, un omaggio al significato profondo che l’olio ha nella nostra cultura e tradizione. alle foglie di ulivo.

Medium fruitiness (3.8), medium bitterness (3.5), and medium spiciness (3.5).
High polyphenol content (601 mg/kg as Caffeic Acid).
On the nose, it is broad and enveloping, with distinct notes of chicory, thistle, wild fennel, and rue. Hints of unripe banana and citrus peels are also present. The palate opens with a sweet entry, followed by balsamic and herbal nuances. The sweetness then gives way to a complex and persistent bitterness, with hints of bitter herbs, unripe banana, and olive leaves. The spiciness complements the bitterness, ensuring great persistence on the palate. The aftertaste reveals wild herbs, arugula, and nettle.
Perfect for tomato-based appetizers, chanterelle mushroom salads, sea bream marinades, grilled potatoes, legume purées, pasta dishes with asparagus, shrimp stews, and grilled cuttlefish. Its pairing with fish-based dishes is particularly intriguing.
